The Global Flavor Atlas is a growing library designed to help you explore cuisines from around the world with confidence, curiosity, and creativity. It isn't a cookbook full of rigid recipes, and it isn't a textbook. Think of it as part flavor guide, part kitchen companion- helping you understand the ingredients, combinations, and cooking traditions that give cuisines their unique character.

Rather than memorizing recipes, you'll learn to recognize patterns and use them as inspiration for your own globally inspired meals.

Why I Created This

Food has always been more than just fuel to me. It’s creativity, comfort, connection, and one of my favorite ways to learn about the world.

I’ve always been fascinated by what makes cuisines taste so different from one another- how geography, climate, history, and culture shape the ingredients people use, the flavors they combine, and the ways they cook. How can the same handful of familiar ingredients create completely different meals depending on where you are in the world?

But I also know not everyone geeks out over food the way I do.

For many people, the hardest part of eating well isn’t motivation- it’s simply knowing what to cook. Staring into the refrigerator wondering what goes together, cycling through the same handful of meals, or feeling like you need a recipe for everything can make cooking feel harder than it needs to be.

That’s a big part of why I created the Global Flavor Atlas.

Rather than telling you exactly what to cook, I want to help you understand how flavors work together, build confidence in the kitchen, and discover new ways to enjoy more plants through cuisines from around the world. My hope is that you’ll start looking at the ingredients you already have and thinking, “Hmm... what could I do with this?” instead of “What recipe am I supposed to make?”

Whether you’re an experienced home cook or just figuring things out, I hope the Atlas gives you plenty of ideas to experiment, adapt, and make meals your own.

A Note on Curiosity & Respect

The cuisines represented here are incredibly rich, diverse, and shaped by generations of history, culture, family traditions, migration, geography, and regional differences. No single page- or even an entire website- could fully capture all of that complexity.

The Global Flavor Atlas isn’t intended to be the final word on what is or isn’t “authentic.” Instead, it’s a starting point for learning about the ingredients, flavors, dishes, and cooking traditions commonly associated with different places around the world.

The goal is inspiration without losing sight of where that inspiration comes from.

Use these guides to get curious, try unfamiliar combinations, and learn something new. And whenever you can, keep exploring beyond these pages- especially through cooks, authors, and creators sharing their own culinary traditions and lived experiences.

Choose a destination and start exploring! Here’s how each sub-region unfolds:

    Start with a little context about the area, landscape, and climate-and how they’ve helped shape the cuisine over time.

    Traditional Flavors

    Get familiar with the cuisine’s overall flavor profile, culinary style, and seasonal patterns. This is your quick introduction to what makes the food of the sub-region distinctive.

  2. Kitchen Inspiration

    See how those flavors come together with simple flavor combinations, common cooking methods, and traditional dishes you can use as inspiration.

  3. Signature Ingredients

    This is where you can really start playing. Explore the plant-based ingredients commonly used in the cuisine, organized into categories like legumes, grains, vegetables, fats, herbs and spices, flavorings, and fruits.

    You don’t need a recipe- try mixing and matching ingredients from the different categories to create your own meal inspired by the flavors of the sub-region.

Do I need specialty ingredients?

Most pages focus on ingredients you can realistically find in U.S. grocery stores, while occasionally introducing traditional specialty ingredients you may enjoy seeking out. Keep it simple or get adventurous- it's completely up to you.

What if I'm not a confident cook?

You're in exactly the right place. This library is designed to make cooking feel more approachable by breaking cuisines into understandable building blocks rather than expecting you to memorize recipes.

Do I need to be vegan or plant-based?

Not at all. My own kitchen is vegan because it reflects my personal values, and all of the examples throughout this library are plant-based. However, the frameworks, flavor profiles, and cooking concepts are designed to be useful for anyone who wants to cook more creatively, enjoy more plants, and build confidence in the kitchen- regardless of where they're starting. Feel free to add animal products as you wish!
